Diced tomatoes, white wine, garlic, thyme & a bay leaf, cannellini beans, kielbasa, tomato paste, minced onions and chopped kale...
...all added to the pot at various points in time, along with a bit of chicken stock...
...then topped with torn baguette and thrown into the oven to brown, and you've got one of the better meals you could possibly have on a snow day (except for braised short ribs, of course). For dessert? Brownie sundae, for 7 points!
What did you cook today?

I cooked Chili. (and Huevos Rancheros this AM) BUT...I had cassoulet last night at Sophies! Mmmmmmm. They have to make the best I've ever had.
I've got to be honest, I liked this better than cassoulet. I know it's a Bourdain recipe, but this had much more variety in the flavors involved. Can't wait to have it for lunch on Monday.
Nope, my cassoulet is a modified Cooks Illustrated recipe. I haven't made the Bourdain one because when I do that, I'm going to do it right (pork rind-lined crock, duck confit, garlic sausage).
brownie + soup = 7 points?!
give me the recipe immediately, thanks :) love you!
Caitlyn: I wish. The soup was 8 points. The sundae was 7 points. Our "points week" ends on Saturday, so we splurged because we had spare weekly points.
Rob, how did you make the chili this go-around, chopped or ground?
I ground it with the KA....It was made strickly for hot dogs for today really, so no beans either. Pretty simple with just some homemade chili powder and a jar of salsa and some fireroasted tomatoes.
Baked mac and cheese is in the oven now....topped with bacon.
Very jealous. I made nothing today. I am hoping to have at least part of a snow day tomorrow to try a cookie recipe.
With trying to go back to school and my crazy work schedule I don't see too many exciting dinners in my near future.
Love the colors of the soup!
